Bison Whole Tenderloin is a premium cut of steak that is extremely flavorful and tender. It is cut from the whole tenderloin muscle, which is located beneath the backbone of the animal. Bison Whole Tenderloin is a lean cut of meat and is best enjoyed when cooked medium-rare to medium. This cut is excellent for grilling, pan-searing, roasting, and slicing for sandwiches.

How do I cook bison?

Take the bison steak out of the refrigerator at least 30-60 minutes before cooking to allow it to come to room temperature. This helps the steak cook more evenly. For steaks, cooking your elk to an internal temperature of 130-135 degrees with a resting time of 5 minutes will ensure a juicy, tender medium-rare. Just don't overcook it, or you'll have f*cked it up!
