The “Snuggery” strip steak is a hidden gem in the restaurant world.

This steak cut comes from the hip end of the Striploin. This part is sometimes referred to as "The Vein" end and it has a connective tissue that is grisly and very tough to chew. We have hand trimmed this part to remove that grisly part so that this steak has all the taste and tenderness that a Center Cut N.Y. Strip Steak but without the cost.
Cooking a steak is quite easy. You want the flavorful brown crust on the outside of the steak while leaving the interior tender and juicy. The best way to do this is over high heat on a hot grill, under the broiler, or in a cast-iron skillet.
