Dried AA Porcini mushrooms are a type of wild mushroom from Italy. They are prized for their earthy, nutty flavor and chewy texture. They are often used in soups, stews, and sauces, as well as for flavoring pastas, risottos, and other dishes. Porcini mushrooms can be reconstituted by soaking in hot water for 15-20 minutes prior to use.

This mushroom and onion soup gets its deep flavor from umami-rich porcini mushrooms and a note of sweetness from onion, creating a satisfying and hearty soup that’s perfect for a cold day.

Ingredients:

Makes 6 to 8 servings

  • 3 Tablespoons Butter

  • 2 Large Onions, julienned

  • 2 Ounces Dried AA Porcini Mushrooms, rinsed well

  • 3 Cups Sherry

  • 3 Cups Beef Broth

  • 3 Cups Chicken Broth

  • 1 Bay Leaf

  • Fresh Thyme, to taste

  • 1 Teaspoon Kosher Sea Salt Flakes

  • Ground Black Pepper

Directions:

  1. Melt butter in stock pot, add onion and cook slowly until caramelized.

  2. Add mushrooms and cook for additional 10 minutes.

  3. Deglaze with sherry and allow to reduce by half.

  4. Add beef broth, chicken broth and bay leaf. Bring to boil, reduce heat to very slow simmer and cook for 2 hours.

  5. Cool soup overnight in refrigerator for best flavor.

  6. Reheat on stove under low heat, stirring often. Remove bay leaf and season to taste with fresh thyme, salt and ground black pepper.

Dried porcini mushrooms are often reconstituted by soaking in warm or even boiling water until softened. Reconstituted porcini mushrooms are frequently chopped before they (and their delicious soaking liquid) are used in recipes. Porcinis are a classic addition to risotto, pasta dishes, soups and stews.

To reconstitute, place porcini mushrooms in a heatproof bowl and cover with boiling water. Soak for 6 to 9 minutes, stirring occasionally. Rinse well. Note: if using soaking liquid in recipe, discard material that may settle in bottom of bowl.

Grade AA is one of the highest grades of dried mushrooms, indicating creamy white, intact slices with few (if any) blemishes and intense flavor
