Ingredients:

1 Cup French Gourmet Rice Blend

1 3/4 Cups Vegetable Stock

1/2 Teaspoon Kosher Sea Salt Flakes, divided

1/2 Cup Diced Super Red Sun-Dried Tomatoes

1 Tablespoon Butter
-
1 Tablespoon Olive Oil
-
1 Onion, thinly sliced
-
1/2 Teaspoon Fresh Thyme Leaves, chopped

1/4 Cup Dry White Wine
Directions:

Combine French Gourmet Rice Blend, stock and 1/4 teaspoon salt in saucepan set over high heat. Bring to a boil, cover and reduce heat to a simmer. Cook for 30 to 35 minutes, then remove from heat and let stand 5 minutes.

While rice cooks, place sun-dried tomatoes in small bowl and cover with boiling water. Let sit 5 minutes, then drain. Set aside.

Heat butter and olive oil in large skillet over medium heat. Add onions and 1/4 teaspoon salt, and cook, stirring occasionally, until soft and deep golden-brown. Stir in reserved sun-dried tomatoes, thyme and wine, and cook, stirring constantly, until wine evaporates, about 2 minutes. Remove from heat.

Fluff cooked French Gourmet Rice Blend with fork, and transfer to serving bowl. Add onion mixture, and toss gently to combine. Adjust seasoning, if necessary. Serve hot.

Combine 1 cup French Gourmet Blend and 1-3/4 cups water and bring to boil. Reduce to simmer, cover and let cook until tender, about 30 minutes.
