Short ribs are beef ribs taken from the plate cut and can be sold bone-in or boneless. In the butcher's world they are sometimes referred to as called Chuck short ribs, Flanken Ribs, braising ribs, crosscut ribs, English short ribs and Korean short ribs.
Short ribs have the best of the rich marbling of rib eye steak combined with the deep beefy flavor of chuck roast. They are best braised and/or slow roasted to make them fall off the bone tender.
