1 lb Alligator Sirloin Filet, thawed and cut into bite-sized pieces
1 cup buttermilk
1 tsp hot sauce (optional, for a bit of heat)
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper (optional, for additional heat)
1/2 tsp salt
1/2 tsp black pepper
Vegetable oil, for frying
Lemon wedges, for serving
In a medium bowl, combine buttermilk and hot sauce (if using).
Add the bite-sized alligator pieces to the buttermilk mixture, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
In another bowl, whisk together the flour, cornmeal, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
In a heavy-bottomed pot or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
Remove the alligator pieces from the buttermilk, letting the excess drip off.Dredge the pieces in the flour mixture, pressing lightly to ensure an even coating.Carefully place the coated alligator bites into the hot oil, frying in batches to avoid overcrowding.Fry until golden brown and crispy, about 3-4 minutes per batch.Use a slotted spoon to transfer the fried bites to a paper towel-lined plate to drain excess oil.
Serve the crispy fried alligator bites with lemon wedges and your favorite dipping sauces such as remoulade, ranch, or spicy mayo.
