Jamaican Jerk Alligator Bowl

For the Jerk Alligator

• 1 lb. Alligator Sirloin Filet, cut into bite sized pieces.

• 2 tbsp Jamaican Jerk Spice Blend

• ¼ cup olive oil

• Juice of 1 lime

• 1 tbsp of dark rum (Optional)

• 1 bell pepper, sliced

• 1 cup Pineapple chunks

For Coconut Rice & Beans

• 1 cup Jasmine Rice

• 1 cup coconut Milk

• 1 cup water

• ½ tsp salt

• 1 can (15 oz) Black Beans, Drained and Rinsed

For the Mango Salsa

• 1 ripe mango, diced

• ¼ cup red onion, finely diced

• 2 tbsp fresh cilantro, chopped

• Juice of ½ lime

• 1 small Jalapeno, Minced (Optional)

• Salt to taste
