Crafted from roasted special-fed veal bones, fresh mirepoix, tomatoes, parsley, and bay leaves, this rich and flavorful reduction is perfect for enhancing veal, red meats, and creating exceptional sauces.

Heating Instructions:

  1. Storage: Keep frozen at 0–15°F until ready to use.
  2. Thawing:
    • Thaw under refrigeration at or below 40°F for 12–24 hours.
    • Once thawed, the product can be stored under refrigeration for up to 14 days.
  3. Heating:
    • Place thawed tub in a pot of boiling water or a steamer.
    • Heat to an internal temperature of 165°F before serving.

Ingredients:
