Braised Wild Boar Roast with Apple Pie Spice Blend

Directions

Braised Wild Boar Roast W/ Apple Pie Spice Blend:

1. Preheat oven to 325°F (163°C).

2. Core and cut apples in to quarters (leave skin on or remove to your preference)

3. Removed Wild Boar Roast from package and pat dry with a paper towel.

4. Rub the Wild Boar roast with Avocado oil and add the Apple Pie Spice Blend with salt and pepper to taste.

5. Heat a cast iron skillet or roasting pan on a medium heat and add 1 tbsp of avocado oil

6. Turn the heat up to high Direction Turn the heat up to high and after you see the oil simmer and slightly smoke add the roast.

7. Sear the roast for about 1-1 ½ minute each side and each end too, until there is a nice crust all the way around.

8. Place apple slices in the bottom of a roasting pan, then set the roast back on top. Pour apple cider Direction Place apple slices in the bottom of a roasting pan, then set the roast back on top. Pour apple cider vinegar and chicken broth around the meat (do not pour liquid over the meat or you will remove the nice crust).

9. Cover with foil or lid and roast for 2.5-3 hours, basting occasionally.

10. When your roast reaches 165-170°, remove from oven.

11. Leave in the pan and let the roast rest at least 20-30 minutes before slicing.

12. Remove from pan and slice the roast into ½ inch slices

13. Place sliced roast on your serving plate and top with the roasted apple

14. Serve and Enjoy.

Mashed Sweet Potatoes with Autumn Spice Mix:

1. Boil the sweet potatoes: Place the cubed sweet potatoes in a large pot and cover with cold water. Add a pinch of salt.

2. Bring to a boil over medium-high heat and cook for about 10-12 minutes, or until the potatoes are fork-tender.

3. Drain the potatoes and return them to the pot.

4. Add butter or olive oil, Autumn Spice Mix, and maple syrup (if using).

5. Mash the sweet potatoes until they are smooth. Season with salt and pepper to taste.
