4 Venison Medallions

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

1 tsp sea salt

½ tsp freshly ground black pepper

1 tbsp balsamic vinegar
Directions
In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Place venison medallions in a zip-lock bag and pour the marinade over them. Seal and refrigerate for 2-4 hours.
Preheat your grill to medium-high heat.
Remove medallions from the marinade and pat dry with paper towels.
Grill the medallions for 3-4 minutes per side for medium-rare, or adjust to your preferred doneness.
Remove from heat and let rest for 5 minutes.
Drizzle with balsamic vinegar before serving.
