Roasted Elk Tenderloin W. Steak Serenade Blend

2 pc (1 ½ - 2 lb) Elk Tenderloin
2 tbsp Steak Serenade blend
2-3 tbsp avocado oil
1 tsp garlic powder
Salt and pepper to taste
Preheat oven to 400°F
Remove the elk tenderloin from the package and dry with paper towels to remove excess moisture.
Rub the tenderloin with avocado oil to ensure the spices adhere well.
Evenly coat the elk tenderloin with Terra Spice Steak Serenade blend, garlic powder, salt and pepper to taste.
In ovenproof skillet, heat the avocado oil over medium-high heat
Once hot, add the tenderloin and sear on all sides until browned (about 1- 1½ minutes per side).
Transfer the skillet to the preheated oven.
Roast the tenderloin for 4-5 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Be careful NOT OVERCOOK or your elk or it will be tough and dry.
Remove the skillet from the oven. Place the tenderloin on a cutting board or plate and allow to rest for 5-10 minutes. This allows the juices to redistribute.
Slice the tenderloin into medallions and serve.
