Roasted Venison Loin Steaks combine rich venison with a bold Coffee BBQ Rub. Sear and roast to medium-rare for tender flavor. Paired with Garlic Herb Roasted Vegetables, offering a hearty, savory complement, this elegant dish is perfect for special occasions or a gourmet treat at home.
2-4lb Venison new york strip loin
2-4 tbsp Coffee BBQ Rub
2 tbsp Avocado
Salt
Pepper
Cut 4 cups of your choice of root vegetables (asparagus, bell peppers, Brussels sprouts, carrots, green beans, sweet onions, zucchini,), cut into bite-sized pieces
2 tbsp olive oil
2 tbsp Garlic Herb Blend
Salt and pepper to taste
Fresh parsley (optional for garnish)
Preheat the oven to 400°F
Remove the venison loin from package and pat dry.
Rub the venison loin with avocado oil
Salt and Pepper to taste and the generously cover with Coffee BBQ Rub.
Heat an ovenproof skillet or cast iron pan on a medium heat and add 1 tbsp of avocado oil
Turn the heat up to high and after you see the oil simmer and slightly smoke add the venison loin
Sear the venison loin on all sides until a nice char crust forms (about 1-1 ½ minute per side).
Transfer the pan to the oven (uncovered)
Roast for 10-12 minutes or until the internal temperature reaches 130°F for medium-rare.
Remove the venison loin from pan and place on cutting board or plate and allow to rest 5-10 minutes.
Slice and serve, Enjoy
Preheat oven to 400°F.
In a large bowl, toss the mixed vegetables with olive oil, Garlic Herb Blend, salt, and pepper.
Spread the vegetables in a single layer on a baking sheet lined with parchment paper or foil.
Roast in the oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
Garnish with fresh parsley if desired and serve warm.
