This Wild Boar Salsa Verde Stew is a rich and hearty dish featuring tender wild boar, smoky Hatch Chile Verde spices, and a vibrant kick from “Tripping Billy” Salsa. 2 lbs. Wild Boar Stew Meat (2 x 1lb. packs)
4-6 tbsp Cooking Oil (Avocado or Vegetable)
2 oz. Hatch Chile Verde Seasoning
4 cups (32 oz) Chicken or Vegetable Broth
½ cup “Tripping Billy” Giardiniera Salsa
1 can (14 oz) Diced Tomatoes
1 medium onion, diced
1 cup Salsa Verde Rice Blend
½ teaspoon salt
Fresh Cilantro
Lime Wedges
Diced Avocado
Crumbled queso fresco
Fresh Tortillas
Tortilla Chips
Start with the meat at refrigerator temperature.
Remove the wild boar stew meat from the package and pat dry with paper towels.
Place the meat into a large mixing bowl and add 1 tablespoon of cooking oil. Mix until thoroughly coated.
Sprinkle in the entire bottle of Hatch Chile Verde Seasoning over the meat then toss the pieces until evenly covered with seasoning.
Heat 2 tablespoons of cooking oil in a large Dutch Oven or heavy-bottomed pot over medium-high heat.
Once the oil is shimmering, add the seasoned meat to cover the bottom of the pot. sear on all sides until browned (3-4 minutes per side).
Remove the meat and set aside.
To avoid overcrowding the pot, you may need to sear the meat in batches. This will ensure it is seared evenly. Additionally, consider adding a small amount of oil with each batch to promote proper browning.
In the same pot, heat another 2 tablespoons of cooking oil.
Add the diced onion and sauté cook on medium heat until softened and fragrant, about 3-4 minutes.
Return the seared Wild Boar stew meat to the pot.
Add the ½ cup of “Tripping Billy” Salsa, Diced tomatoes, chicken broth and salt. Stir well to combine.
Bring the mixture to a simmer, then cover and reduce heat to low.
Cook for 2.5-3 hours, stirring occasionally.
After cooking for 2.5-3 hours and the boar meat is fork-tender, add the Salsa Verde Rice blend and continue to cook for another 20 minutes, stirring occasionally.
Ladle the stew into a bowl and garnish with fresh cilantro, lime wedges, diced avocado, or crumbled queso fresco as desired. Serve with fresh tortillas or tortilla chips.
