This minimally processed preparation preserves the bird’s authentic presentation, freshness, and gourmet appeal while allowing for traditional nose-to-tail culinary preparation.
Flavor & Texture
Squab offers a rich, deep flavor that is more refined and delicate than duck, yet more flavorful than chicken. The meat is tender, juicy, and velvety in texture with a mild gamey character and subtle natural sweetness.
Because squab is naturally darker meat throughout, it remains exceptionally moist and succulent when cooked properly.
How to Cook
Squab cooks quickly and is best enjoyed medium-rare to medium to preserve its tenderness and natural juices.
Oven Roasting (Recommended)
Preheat oven to 425°F.
Pat dry and season generously with salt, pepper, butter or olive oil, garlic, and fresh herbs such as thyme or rosemary.
Roast for approximately 18–22 minutes depending on desired doneness.
Internal temperature should reach:
130–135°F for medium-rare
140–145°F for medium
Allow the bird to rest for 5 minutes before serving.

Sear breast-side down in a hot skillet before roasting for beautifully crisp skin.
Pair with wild mushrooms, roasted root vegetables, cherries, figs, or red wine reductions.
