  • 1 lb. Camel Ground

  • 1 lb. Kangaroo Ground

  • 1 lb. Ostrich Ground

  • 1 lb. Yak Ground

  • 2 large eggs

  • 1 cup breadcrumbs

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup grated Parmesan cheese

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp smoked paprika

  • 1/2 tsp ground cumin

  • 1/4 tsp cayenne pepper (optional, for heat)

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1/2 tsp smoked paprika

  • 1/2 tsp ground cumin

  • 1/4 tsp cinnamon

  • Salt and pepper to taste

  • Fresh basil or parsley for garnish

Directions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare Meatballs: :

    In a large mixing bowl, combine the Camel Ground, Kangaroo Ground, Ostrich Ground, and Yak Ground.

    Add the eggs, breadcrumbs, chopped onion, minced garlic, parsley, Parmesan cheese, salt, black pepper, smoked paprika, ground cumin, and cayenne pepper (if using).

    Mix thoroughly until all the ingredients are evenly distributed.

  3. Form Meatballs:

    Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.

  4. Bake Meatballs:

    Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and browned on the outside.

  5. Make the Spiced Tomato Sauce:

    While the meatballs are baking, heat the olive oil in a large skillet over medium heat.

    Add the chopped onion and garlic, and sauté until softened and fragrant, about 5 minutes.

    Stir in the crushed tomatoes, smoked paprika, ground cumin, cinnamon, salt, and pepper.

    Let the sauce simmer for about 15-20 minutes to thicken and develop flavors.

  6. Combine Meatballs and Sauce:

    Once the meatballs are done baking, add them to the skillet with the tomato sauce.

    Gently coat the meatballs with the sauce and let them simmer together for an additional 5-10 minutes.

  7. Serve:

    Garnish with fresh basil or parsley.

    Serve the meatballs and sauce over cooked pasta, rice, or with crusty bread on the side.
