These elk steak tacos are simple, flavorful, and perfect for any meal. Thinly sliced elk steak is marinated in a mix of avocado oil, fresh lime juice, and spices like cumin, smoked paprika, and chili powder. After a quick sear, the tender strips are served in warm tortillas, topped with fresh cilantro, a squeeze of lime, and a dollop of Tripping Billy Salsa. It's a straightforward, delicious way to enjoy something a little different.

1 lb. Elk Steak
1 tbsp Avocado Oil
2 tbsp Fresh Lime Juice (About 1 lime)
1 tsp Ground Garlic Powder
1 tsp ground cumin
1 tsp smoked paprika
1 tsp chili powder
½ tsp onion powder
Salt and black pepper, to taste
Warm Flour or Corn Tortillas
Fresh Cilantro, Chopped
Lime Wedges

In a large bowl, mix avocado oil, lime juice, garlic powder, cumin, smoked paprika, chili powder, onion powder, salt, and black pepper.
Add the elk steak, ensuring all pieces are well-coated in the marinade.
Cover and refrigerate for at least 30 minutes or up to 4 hours for deeper flavor.
Heat a skillet over medium-high heat.
Remove elk steak from the marinade and cook for 2-3 minutes per side, or until cooked through. Avoid overcooking to keep the meat tender.
Let the elk steak rest for 1 minute, then slice into 1/4" to 1/2" strips.
Warm the tortillas in a dry skillet or microwave.
Add 4-6 elk steak strips to each tortilla.
Top with fresh cilantro, a squeeze of lime juice, and a spoonful of Tripping Billy Salsa.
